Gluten Free Chicken Parma-Rosa Recipe

Using my recipe for the gluten free chicken nuggets, I was able to come up with a fantastic Gluten Free Chicken Parma-Rosa Recipe.

For the chicken

1/2 cup Gluten Free Bisquick
1/3 cup crushed rice chex
1/2 cup Parmesan cheese grated (or toasted GF Bread crumbs)
1 tsp paprika
1/2 tsp garlic salt (or salt)
1/2 tsp red pepper (optional)
1/2 tsp chili powder (optional) 
1 tsp sriracha (optional) 
4 chicken breasts 
2 eggs lightly beaten (or egg substitute)
3 tablespoons of butter (or butter substitute) melted

Gluten in Non-Food Products

I recently made a mistake and managed to get myself into gluten, when I say recently, I mean yesterday.  It was only after the fact did I think about what I was doing.  I had used latex gloves and had not checked what was in the powder.  I was thinking baby powder or corn starch, well I was right it was baby powder, a nice mixture of talc and gluten.  I had taken off the glove and not thinking I started to bite my nails.  Yep, I was sick.  I am still sick from that mistake.  So I am creating another list of household gluten containing items that are not (generally) edible.  

Medication:

Pills
Cough Syrups
Cough Drops
Vitamins
Minerals
Capsules

Toiletries:  

As I have mentioned a lot there is gluten in every type of makeup.  So I will skip those items
Toothpaste
Mouthwash
Baby Powder
Bath Salts
Soap
Sunscreen


Household items:

Detergents
Rubber Gloves, Latex Gloves
Cleaning solutions
Envelopes (I keep reading that this is not true, however, I have gotten sick off them so just don't like them if you can avoid it.)

Random items:

Glue
Art Supplies (especially Play dough or molding dough)
Gum
Pet Food

This is a basic list to get you started and to make sure that you read the ingredients on things you don't PLAN on eating.  From my experience that doesn't always happen the way I would want it to.

Special Occasion Etiquette


Today my ward Graduated from High School.  We couldn't be prouder of him.  He had such a long journey to get to this point.  He will be leaving for the US Army come October.  However, there are a few issues for those with Celiac at these types of occasions.  As we were leaving the Graduation, The School officials tried to press a Cookie and lemonade into my hands.  I had to decline; in fact I wouldn't even touch the snacks.  I didn't want the gluten on my hand from the cookies and I had no idea of how, where or with what the lemonade was made.  This means that I couldn't safely consume anything.  While our Ward understood why I politely said no thank you and wouldn't let the snacks touch me, the person pushing them did not.  They only understood when I told them that I was allergic.

Learning about yourself (Personality Tests)

One of the things I have noticed while trying to get my body healthier is that my mind needs to be worked on as well.  This led me to the MYERS-BRIGGS personality test.  This led me to discover that I am an INTP or introversion intuitive thinking and perceiving.  Have completed multiple tests and have come up with the same answer each time.  What this means for me.  This means that I am not good at dealing with others people’s feelings, not that I don't try or don't care.  I just don't normally think like that.  I also tend to think through situations that include over-analyzing them.  I like to by myself or with a small group of close friends.  I am not one for large parties; also I have a harder time making good friends and not just acquaintances.  I also see the world as something that needs to be done all at once.  I am great at multitasking and good under pressure, as long as that pressure is not overly personal.  Understanding this led me to better understand who I am and how I interact with others.  I have a friend who is an ENTP or the extroverted version of me.  At first it was hard to put much stock in this type of test.  However, I soon found that the more I read on my personality type the more I realized that it was just like me.  Also my husband had to point out that this is how I live my life.

Celiac and Lupus

Those are not freckles, that is an example of a butterfly rash.  

Who would have thought that there is a connection between Celiac and lupus?  Well there is one, those who have Celiac are at higher risk for Systematic Lupus. It wasn't until I ran into someone who had been diagnosed first with Celiac, and then with Lupus, that I even knew there was a connection. Since Celiac and lupus can be found on the same DNA sequence, it seems they can also be activated at the same time. Those with Celiac should probably get a basic blood test to make sure that Lupus is not even a possibility for them.  I will be doing so just to make sure that this is not an issue for me, more of a ruling out test.

Gluten Free at a Salad Bar


When one thinks of a salad bar, it is often assumed that the salad bar is gluten free.  This is not always the case.  Cross contamination with items such as croutons or other "toppings" is not as rare as one would hope.  Not only that, but many salad dressings are not gluten free.  This does not mean that you have to give up salad bars.

Atypical Celiac


Atypical Celiac may show its self in a very non classical celiac way, meaning that you may not have issues with the intestines.  The signs and symptoms are often misdiagnosed as another disorder.  However, the symptoms will persist or worsen until the patent is placed on a gluten free diet.  Please note that almost all of these symptoms are chronic or severe and should not be confused with regular issues.

7 Reasons You Should Not Use Gluten Free for Weight Loss


Many people think that by going gluten free they can lose a little weight.  I mean, why not, it worked for your friend.  Here are a few things about the gluten free diet that makes it not so great for dieters.  I have ended up on this rant because I had a loaf of gluten free bread snatched out of my hands by a 700lb Jabba the Hut who needed the bread for "her diet".  She and many others seemed to think that going on a gluten free diet will magically make the weight fall off of them.  It really doesn't work that way.

If you Have Celiac, You may react to Corn!

In February of 2012 a new study was done on those people with diagnosed Celiac and how the proteins commonly found in corn can affected them.  The reason for this study was that some people who have Celiac are still not getting better, even after going on a traditional gluten free diet.  Why is this happening?  It turns out that the gluten in corn is similar enough to the gluten in wheat, barley, and rye to create a reaction in a few celiac patients.

Reasons to take your Vacation




Vacations are important for many reasons.  They help maintain the health, they reduce work related stress, they increase productivity, and vacations improve job performance.  Each one of these reasons alone is a good reason to start taking your vacation time.  However, you may feel that you are too busy to be able to properly take the time they are allotted. Here are the benefits of taking your vacation time. 
Vacations maintain health: Vacations can allow a person the rest they need, allow them to catch up on sleep and help stave off depression.  By allowing the worries of work to not be the first thing they think of this will allow the officers much needed relax and recoup time.  By letting them sleep better you are allowing yourself to recharge your immune system. This boosted immune system means that each person will have fewer sick days.

IgA Deficiency and What it Means


I have talked about being IgA D but I don't say what that really means, so I went to many web sites to double check what I knew and have broken it down to almost readable levels.  Immunoglobulin A deficiency is where there is a low level of IgA in the Serum (blood).  This is commonly diagnosed for those between ages 20-40.    For people with this issue, if we ever need blood, we have to have washed blood only.  Full blood or blood that is rich in IgA can cause an anaphylaxis effect (strong allergic reaction).

Gluten in my beauty products? YEP!



After seeing a whole bunch of ads for Gluten free makeup I started wondering how many of my beauty products contain wheat or gluten.  I had to throw out some of my lip balms, some of my mineral makeup and a good portion of my lipsticks, even a few body lotions.  I started looking for a few key words in these products.

If your products contain these words it might be time to start looking for other products 

Some of the items thrown away are my Dove hair products, My daily moisturizing lotion, a few lip balms, and what is pictured.  While it is a smaller portion of the makeup I own and use on a regular basis this is still sad for me.  Two of the items were favorites.  It is going to be hard to find Gluten free equivalents. 
On the up side I was able to keep a lot of my makeup.  The only thing I need to replace right away is my daily moisturizing lotion and my hair care products.  So I will get started on finding another type of lotion as well as a basic hair care products that I love and I am going to be taking a much closer look at each and every item I buy.  
I know that you do not put these items into your mouth and if you are ingesting them then you are doing something wrong.  However, things that goes on hands, on your lips or around your eyes can get inside of you. This can include hair care products if you often touch your hair.
