Semi-Homemade Gluten Free Pumpkin Bread

Betty Crocker came up with an easy and Semi-homemade pumpkin bread. In the honor of the leaves finally changing colors, and just in case you haven't gotten sick of pumpkin flavored everything.  Here is the Betty Crocker recipe that is so easy and sounds so good.

Ingredients:

1 box Betty Crocker® Gluten Free yellow cake mix

1 can (15 oz) pure pumpkin

½ cup canola oil

1 teaspoon ground cinnamon

½ teaspoon ground ginger

¼ teaspoon ground cloves

2 teaspoons gluten-free vanilla

½ cup gluten-free semisweet chocolate chips (dairy- and nut-free)

Gluten Free Cocktail Sauce Recipe

Cocktail sauces are well known for containing gluten on the shelf.  Again, there is no reason for the gluten to exist in cocktail sauce.  It is so very easy to make.  It only takes minutes to make the perfect cocktail sauce for your needs.  

Ingredients:
1/2 cup of ketchup
2 tablespoons horseradish
Worcestershire sauce
1 lemon
Tabasco sauce, to taste

Gluten Free Ranch Dressing Recipe

Homemade Ranch Dressing

Ingredients:
1 cup sour cream (make sure it is gluten free)
1/2 cup mayonnaise
1/2 cup cold buttermilk
1/4 cup chopped parsley
1/2 cup chopped chives
1 clove garlic
salt and coarse ground black pepper
additions:
garlic powder
tabasco sauce
worchestershire sauce (some are gluten free already!)
chopped dill

Gluten Free Chicken Parma-Rosa Recipe

Using my recipe for the gluten free chicken nuggets, I was able to come up with a fantastic Gluten Free Chicken Parma-Rosa Recipe.

For the chicken

1/2 cup Gluten Free Bisquick
1/3 cup crushed rice chex
1/2 cup Parmesan cheese grated (or toasted GF Bread crumbs)
1 tsp paprika
1/2 tsp garlic salt (or salt)
1/2 tsp red pepper (optional)
1/2 tsp chili powder (optional) 
1 tsp sriracha (optional) 
4 chicken breasts 
2 eggs lightly beaten (or egg substitute)
3 tablespoons of butter (or butter substitute) melted

Sesame Crusted Asian Inspired Fish (or Chicken) Recipe

The Chicken Variety
I came up with this idea completely by myself out of what we happened to have in the freezer and spice selection at the time.  Give it a shot.

Ingredients

4 frozen fish fillets
4 tablespoons sesame seeds
4 table spoons GF soy sauce
Sirachia (to taste)
1 Teaspoon Garlic Powder
1 package of frozen vegetables of choice (I like onion pepper mixtures or squash mixtures with this dish)

Preheat oven to 350

In a greased casserole dish add the frozen vegetables
Place the fish fillets on top of the vegetables
spread the soy and Sirachia (optional)  and the garlic powder over the fish and let it dribble into the vegetables
sprinkling the sesame seeds over the fish so that it almost crusts
Bake for 1 hour (check fish for flakiness before serving)

Suggestion: Serve with rice or rice noodles.

This is really good and so easy to switch up.  It is also a great way to add fish to your diet.  My family personally loves the recipe.  Also you can change out the fish for chicken.  Just make sure that you add to the cooking time so that the chicken is finished.  The best thing about this recipe is that you can change it up. Sorry for the picture, my fish version somehow went missing from my camera.

Semi-Homemade Gluten free Eggplant lasagna Recipie

Ingredients

2 medium or large eggplants
¾ cups olive oil
3 teaspoons salt
2 teaspoons ground black pepper
1 jar of spaghetti sauce
1 lbs hamburger meat browned
1 clove garlic, minced
1 large container Cottage Cheese
1 cup Parmesan cheese – grated or shredded
2 large eggs – beaten
3 cups mozzarella cheese – grated

Semi-Homemade Gluten Free Cobbler

I was in the mood for Strawberry Rhubarb recently.  Only issue with that is that it is the wrong time of year.  Knowing this I found that it was a fantastic time to pull out my gluten free grocery guide and look around for pie fillings that are gluten free.  After I located a few it was off to the store.

Hash Brown Casserole Semi-Homemade



Ingredients
1 large bag of hash browns
1 lbs of crumbled breakfast sausage
2 cups of shredded cheese
1 med onion diced
½ large green peppers diced
8 large eggs
 5 oz can of evaporated milk (not condensed)
1 tsp garlic powder
1 tsp seasoning salt
Pepper to taste

Last Second Gluten free gifts

So you have an extra guest coming tomorrow for christmas that you didn't plan on and you don't have a gift for them.  This is not an issue, I have some quick homemade ideas that will mkae them feel special. 

For her:

Facial Scrubs

4 tsp. of honey
2 tsp. of sugar
4 tsp coffee grounds
I add a few drops of lemon for a fresh scent but you can use small drops of essential oils for scent.

Put into a cute cup and wrap however you choose.

Facial Mask

2 cups natural yogurt (plain)
1 cup oatmeal(plain)

mix together and add the directions to leave on the face for 10-15 minutes and to keep refrigerated.

Foot Scrub

4 tsp. of honey
2 tsp. of sugar
2 tsp baking soda
4 tsp coffee grounds
Essential oil or aloe

Mix together and package nicely.

Lip Gloss

Mix together any broken or unused eyeshadow that fits the person personality and tones of the guest (assuming you have met them) with patrolium jelly in a small pot and close tightly.

 

For Him:

Try food like cookies or candies (depending)
Or a beer and cheese gift (gluten free of course)
Popcorn and penuts

Depending on the man some of the above may be a good suggestion.  

You are never out of gift ideas as long as you have a well stocked kitchen.  Don't panic just take a few minutes to throw something together that makes them feel special. 

This way no one comes or leaves empty handed.

Semi-homemade Christmas Treats






It is the time of year that I bake.  A lot, however, this time I decided to more of a candy rout and less of a cookie and cake rout.  Of course being gluten free can make this a little more challenging. I did make one batch of cookies, but that is a secret recipe!

Haystacks!

Yep easy and gluten free! The amount of ingredients depends on how many you want to make
1 bag coconut
1 bag candy chips (chocolate, white chocolate, butterscotch, ECT)

Directions Preheat oven to 325
 Prepare a baking sheet by lining it with aluminum foil. Preheat the oven to 325 degrees.

 Place the coconut in a baking pan, and toast it in the oven until golden brown. During the toasting process stir the coconut every 2 to 3 minutes.

 While the coconut is toasting, place the chocolate in a large microwave-safe bowl. Microwave it until it is melted, stirring every 30 seconds.

 Once coconut is toasted and chocolate is melted, in a bowl mix the two using a spoon make a drop or ball out of the mixture.

 Allow the candy to set.  You can wait for 24 hours or you can refrigerate them for 30 to 45 minutes

Coated pretzels

Flavored candy coating (I used chocolate and vanilla)  
Bag of gluten free pretzels
Optional: toppings or flavorings in half of the pretzels I added peppermint and crushed candy cane; sprinkles can be added as well.

Directions preheat the oven to 250

Prepare a baking sheet with foil
Melt the candy coating in the microwave stirring every 30 seconds
Pour the melted candy coating over the pretzels
Bake the pretzels for 10 minutes, stir and bake again for 5 minutes set to cool and then break apart the pretzels.  
Alternative: you can dip the pretzels into the melted candy and then allow to dry on wax paper.  
If you choose to decorate the pretzels do so while they are still hot and the candy is still liquid. 
 
 Fruity pebbles treats

3 tablespoons margarine or 3 tablespoons butter
1 package regular GF marshmallows
6 cups Fruity Pebbles cereal

Melt margarine in large saucepan over low heat. Add marshmallows and stir until completely melted. Remove from heat.

Add Fruity Pebbles. Mix well

Using buttered spatula or waxed paper, press mixture evenly into a pan coated with cooking spray. Cut into Allow to cool and then cut into the size you need!

If you want to do this is the microwave melt the butter and the marshmallows stir after every minute! Make sure that the marshmallow is smooth.

Marinated Tilapia (semi-homemade)

I love fish; I like it even better when it is easy and so amazingly good.  I used tilapia since it is a light fish and you don't really have to spend any time soaking the fish, the cooking process does that for you.


Ingredients (feeds 4)

1- 1 1/2 lbs tilapia
1 bottle of Kraft Tuscan House Italian Dressing (or any gluten free dressing of your choice)
Salt and pepper


Directions preheat the oven to 350

Put the fish in a baking pan (I line mine with foil)
Put the dressing on the fish until there is a good coat of dressing.
Salt and pepper to taste
Cover with foil and bake for 15 minutes (this steams the fish)
Remove the foil and bake for 15 minutes.   (Allowing it to brown lightly)
Keep the cooked dressing to add as a coating to the fish (or rice) if you desire.

Yes it really was that simple and the flavor is amazing.  You get a great tasting dish with very little work.  I served mine with rice and a pepper broccoli mix.  This is a healthy greatly flavored dish.

Gluten Free Doughnuts Semi-Homemade

I have been having a killer craving for doughnuts recently and almost nothing was making it better. All of the store bought GF doughnuts are disgusting, so instead of feeling sorry for myself I decided to bake.  At 10pm at night I start making doughnuts.  I did break down and buy a doughnut pan on black Friday so at least I have the right tools, now to find a way to make the darned things.  I look for many online recipes and found that they all require a doughnut maker, something I will admit that I am currently too poor to own.  OK so I can't do that and I am having issues finding any recipes, especially ones that are semi-homemade and gluten free.  I ended up putting together those doughnut maker recipes and coming up with one that is close the recipe on my doughnut pan. 


Batter

Ingredients
Full box Gluten free yellow or chocolate Cake Mix
2 large eggs (or substitute)
1 stick melted butter (or substitute)
1 cup milk (Almond milk works)

Directions: Preheat oven to 350 degrees

Grease doughnut pan
Mix eggs, butter and milk with the cake mix
using a mixer or by hand beat until the batter is smooth
pour batter into the doughnut pan almost filling the cup.  (I used an icing bag for this)
Bake for 14 minutes.

Plain
For a fantastic icing stolen from my cinnamon roll recipe.

Cream Cheese Icing:
4 ounces cream cheese, softened
1/4 cup butter, softened
1 1/2 cups powdered sugar
1 1/2 teaspoons milk
1/2 teaspoon vanilla 
 
Mix together, then melt slightly to put onto the doughnuts.  
 
 
 
 
Almond milk icing:
3/4 c powdered sugar
1 Tbsp almond milk
1/4 tsp vanilla
 
Mix
 
Powdered sugar
You can also use cinnamon and sugar, or powder sugar in a plastic bag (just put the doughnut in the bag when it is hot) Top however you desire.  Next time I am making blueberry doughnuts.  Yumm

Gluten Free Green Bean Casserole Semi-Homemade


I love Green Bean Casserole and for the last few holidays I have missed the opportunity to have it since I know I can't eat the crisp onions or most cream of mushroom soups.  I saw a critical piece of information today that made me adjust that thought.  Funyuns are not labeled gluten free but according Frito-Lay they do not contain Gluten.   I saw this and quickly made a few adjustments to have gluten free Green Bean Casserole for Thanksgiving. This is based off the Campbell recipe. I no way endorse these products. These are just what I will be using. 

Ingredients:
  • 1 can (10 3/4 ounces) GF Cream of mushroom Soup 
  • 1/2 cup milk (or 1/4 cup milk if the soup is not condensed) 
  • 1 teaspoon GF Soy Sauce (I use Kikkoman Gluten Free) 
  • Dash ground black pepper  
  • 4 cups cooked cut green beans (I like to use well drained canned) 
  • 1 1/3 cups Funyuns Onion Flavored rings (lightly broken up)


Directions (preheat oven to 350)

  • Mix the soup, milk, GF soy sauce, black pepper, beans and 2/3 cup Funyuns in a 1 1/2-quart casserole.
  • Bake at 350°F. for 25 minutes or until the bean mixture is hot and bubbling.  Stir the bean mixture.  Sprinkle with the remaining Funyuns.
  •  Bake for 5 minutes or until the Funyuns are golden brown.
