Gluten Free Spooky Spaghetti

Spooky and child friendly gluten free dinner idea

Want to make a Gluten Free Halloween Meal for your little one.  Don’t want to spend a lot of time on it? 
You can make Black Spaghetti. 

Ingredients
Gluten free spaghetti noodles of choice
Black icing paste (the paste used to color icing)
Water
Salt
Your Favorite gluten free spaghetti sauce
(Orange icing paste can be added to the sauce or you can even make the sauce black as well.)

Prepare your water for the spaghetti as directed.  Add in the black icing paste to the color you desire.
(Note: the amount of paste that you use will determine the color of the spaghetti that you get.  With less color you will get purple noodles, with more you will get a rich black.  Either color works well for this.) 
Boil the spaghetti to the directions
While the spaghetti is boiling heat up your sauce on the stove top in a pan.  If desired add the color you wish to get a spooky effect.


Some people make meatballs that look like eyes to add to this.  Let me know if you wish that recipe?

Philly Cheesesteak Stuffed peppers

This dish is fantastic and naturally gluten free.

8 oz. Thinly Sliced Roast Beef
8 Slices Provolone Cheese
6 oz.  Mushrooms
2 Large Green Bell Peppers
1 Medium Sweet Onion
2 Tbs. Butter
2 Tbs. Olive Oil
1 Tbs. Garlic – Minced
Salt and Pepper – to taste

Gluten Free Chicken Parma-Rosa Recipe

Using my recipe for the gluten free chicken nuggets, I was able to come up with a fantastic Gluten Free Chicken Parma-Rosa Recipe.

For the chicken

1/2 cup Gluten Free Bisquick
1/3 cup crushed rice chex
1/2 cup Parmesan cheese grated (or toasted GF Bread crumbs)
1 tsp paprika
1/2 tsp garlic salt (or salt)
1/2 tsp red pepper (optional)
1/2 tsp chili powder (optional) 
1 tsp sriracha (optional) 
4 chicken breasts 
2 eggs lightly beaten (or egg substitute)
3 tablespoons of butter (or butter substitute) melted

Sesame Crusted Asian Inspired Fish (or Chicken) Recipe

The Chicken Variety
I came up with this idea completely by myself out of what we happened to have in the freezer and spice selection at the time.  Give it a shot.

Ingredients

4 frozen fish fillets
4 tablespoons sesame seeds
4 table spoons GF soy sauce
Sirachia (to taste)
1 Teaspoon Garlic Powder
1 package of frozen vegetables of choice (I like onion pepper mixtures or squash mixtures with this dish)

Preheat oven to 350

In a greased casserole dish add the frozen vegetables
Place the fish fillets on top of the vegetables
spread the soy and Sirachia (optional)  and the garlic powder over the fish and let it dribble into the vegetables
sprinkling the sesame seeds over the fish so that it almost crusts
Bake for 1 hour (check fish for flakiness before serving)

Suggestion: Serve with rice or rice noodles.

This is really good and so easy to switch up.  It is also a great way to add fish to your diet.  My family personally loves the recipe.  Also you can change out the fish for chicken.  Just make sure that you add to the cooking time so that the chicken is finished.  The best thing about this recipe is that you can change it up. Sorry for the picture, my fish version somehow went missing from my camera.

Gluten Free Mac and Cheese Recipe

Ingredients: 

4 tablespoons butter
1 teaspoon seasoning salt
3/4 teaspoon ground black pepper
1 teaspoon Mustard Powder
4 cups milk
4 Tablespoons Rice Flour
4 cups shredded cheese
1 Box Gluten Free Elbow Macaroni

Directions:

Cook macaroni according to package directions I undercook it by a few seconds.

Drain macaroni and set aside.

Melt butter in medium saucepan.

Add Rice flour to the butter to make a roux.

Mix in the milk

stirring constantly, cook over medium to medium low heat until thickened

Add the Salt, pepper, and dry mustard

Slowly add the shredded cheese into sauce until melted;

Combine cheese mixture with macaroni.

Optional:  For a nice crust to the top of the Mac and Cheese, bake the mixture in a greased pan at 350 for 30 minutes.

GF Spaghetti Hot Dogs


Such an easy and fun GF dinner, this way guarantees that you get the right amount of spaghetti per hot dog piece.  This is a fun child friendly dinner.  Also with the right pasta sauce this is a great way to get some veggies in with the meal.  Personally I like to serve this with salad.

GF Chicken Nuggets


1/2 cup Gluten Free Bisquick

Semi-Homemade Gluten free Eggplant lasagna Recipie

Ingredients

2 medium or large eggplants
¾ cups olive oil
3 teaspoons salt
2 teaspoons ground black pepper
1 jar of spaghetti sauce
1 lbs hamburger meat browned
1 clove garlic, minced
1 large container Cottage Cheese
1 cup Parmesan cheese – grated or shredded
2 large eggs – beaten
3 cups mozzarella cheese – grated

Pineapple Shrimp Kababs



Temperatures have started to rise and that brings to mind a grill day, or at least a lighter meal.  Here is a fantastic gluten free recipe that is sure to please almost everyone (who doesn't have a shrimp hating ward).  I can't wait to start grilling this year.  Sadly, I will have to wait until I have moved. Only then will I have a place to grill.

Split Pea Soup Recipe

Ingredients

  • 1 lbs split peas
  • 6 cups Chicken stock or water
  • 1 pounds ham or bacon
  • 2 onions, thinly sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3 Bay leaves
  • 3 stalks celery, chopped
  • 3 carrots, chopped
  • 1 potato, diced

I love Japanese food but so much of it now contains gluten.  I finally mastered a way to make this Japanese dish without using gluten.  You will need to have Gluten Free Bisquick and a gluten free soy sauce, also as you know make sure to watch any premade broths.

A Gluten Free St. Patrick's Day!


This was supposed to post at 6 this morning and for some reason schedule failed me. I checked in to see how everything was doing and noticed that this post still said draft.   So I am posting this now.  Yes it is a little late for St. Patrick's Day seeing as how it is after five pm.  However, I am not going to let my work go to waste.

Tamale Recipe (repost)



We made Chicken Tamales tonight and I remembered that I had posted a recipe for Tamales on my blog back at the start of it.  I thought now would be a great time to do a repost.


 I was told that the Tamale is for celebration.  Therefore I am celebrating the fact that I like tamales.  This recipe is so good and it is gluten free naturally (as long as you don't react to corn).  It takes a lot of time to make and a lot of talent to roll them correctly, as seen by the picture I as of yet do not have the level of talent needed for rolling them correctly.  I was also so impatient to eat them that I almost forgot to take a picture first.  In other news I am being sent my first item to review.  This is hugely exciting for me.  So I guess I do have something to celebrate!  Please do not try this if you have issues with Corn!

Brie Stuffed Salmon Recipe

I am looking at fresh salmon and a large wedge of brie trying to make Sunday dinner.  (which I forgot to take pictures of.) and an idea came to me from what I had around the house.  It looked and tasted amazing and no one could tell that it was gluten free. 

  •  large wedge of fresh brie
  • 2 pounds thick filet of salmon
  • Two handfuls of fresh spinach leaves (chopped)
  • 1/2 a medium onion diced
  • 2 cloves of garlic (finely chopped)
  • GF bread crumbs
  • Chives Chopped
  • Salt
  • Pepper
  • Splash of oil   

 

 Directions Preheat oven to 350 degrees

  1. Remove the bones and Skin from the fillet and cut into equal sized fillets
  2. Add the desired amount of salt and pepper to the salmon
  3. Cut an X into the top of the fillet not cutting into the sides
  4. cut the flaps of the X leaving the edges uncut (so the flaps stay on the salmon) this will create a pocket.
  5. Add the oil, onions, chipped chives, and garlic to  the same pan and cook on medium heat until the onions are clear.
  6. Remove the brie crust and melt the brie.  (remember to keep it mixed as it will separate)
  7. Into the cavity of the salmon add the Spinach and the onion mixture.  Make sure to stuff the "Flaps"
  8. Pour the brie into the cavity on top 
  9. Take the left over oil from the brie and coat the top of the salmon
  10. Shake the GF bread crumbs over the salmon for a crust
  11. wrap each piece loosley in tin foil and bake for 35 minutes
  12. Pull from the oven and let the salmon sit for 10 minutes.
  13. Enjoy!
I paired this dish with a salad and baked potato and had one very happy family.  Although I am sure that Rice and steamed vegetables would work great. 

Wine choice for the night was a light Moscato however, a great Riesling or a chardonnay would work well.
