GF Spaghetti Taco Bake

I was out of ideas and basic go together ingredients and too lazy to go shopping, so I came up with this one.  I was surprised to learn I am not the first; however, this is the gluten free version.

1 package of corn or rice noodles (cook to directions)
1 lbs ground beef (browned)
1 large onion (chopped)
1 can of corn (drained)
1 tomato (chopped)
1/4 head of lettuce (Chopped)
1 package of GF taco seasoning
2 cups cheese (shredded)

Preheat the oven to 350
Mix the ground beef and the taco seasons as stated on the package instructions
In a greased pan mix the onion, corn, taco beef, and noodles and 1 cup of the cheese.  Make sure the noodles are evenly coated.
Top the mixture with the last cup of cheese
Bake for 30 minutes or until the cheese is bubbly
Allow the casserole to cool for 5 minutes
Top the casserole with the lettuce and tomato
Optional: mix together sour cream and salsa and drizzle on top.
 Serve and enjoy!
