It
is cold and flu season again. Also fall
allergies are just now starting for those sufferers. You need to make sure that the medications
you use are in fact gluten free. I have
compiled a list of gluten free cold/flu and allergy medications to help you
through the fall season. Also, if you

Gluten Free Chicken Parma-Rosa Recipe
Using
my recipe for the gluten free chicken nuggets, I was able to come up with a
fantastic Gluten Free Chicken Parma-Rosa Recipe.
For
the chicken
1/2
cup Gluten Free Bisquick
1/3
cup crushed rice chex
1/2
cup Parmesan cheese grated (or toasted GF Bread crumbs)
1
tsp paprika
1/2
tsp garlic salt (or salt)
1/2
tsp red pepper (optional)
1/2
tsp chili powder (optional)
1
tsp sriracha (optional)
4
chicken breasts
2
eggs lightly beaten (or egg substitute)
3
tablespoons of butter (or butter substitute) melted

Back to School Food Allergy Summit -Review-
Tonight I have attended the Food Allergy Summit. There was a
lot of good information to be shared with the participants. We learned
more about 504 plans, the newest in Epi Pen Technology, how to deal with school
administrators and what is going on in the world of allergy treatment.
The Carolina Cupcakery has also managed to create an Allergy Free Cupcake
that has no soy, nuts, peanuts, wheat, gluten, Soy, milk or eggs. Also
the taste was divine.
There are now automatic EPI pens that talk
the user through the steps of how to administer the medication should the need
arise. This is great for teachers and those who are not comfortable with
how to use an EPI pen. This is just the thing you need if your child has
a life threatening allergy and there is not always the possibility of teaching
everyone how to properly administer the cure.
504 Plans, I have talked about them
before, these are contracts with the school in how to deal with a Childs
allergies. Also the school must provide a safe learning environment for
your child. That includes safe food. If you have not yet created a
504 plan for your child with Celiac or a life threatening allergy, you should
do so as soon as possible. Since the parent is the expert in the needs of
the child, make sure that you have an active part in developing this plan.
Allergy treatment, there has been a change
in the way Doctors are handling some allergies, instead of avoiding the foods
that make yourself or your child react, they are trying to work up a tolerance.
Sadly however, this doesn't work for those who have Shellfish allergies
or Celiac. Those allergies work differently than a peanut or tree nut
allergy. At this time the only way to deal with those issues is avoidance
of the foods that make you sick.
There was so much information given out to
those who attended. This may turn into a yearly event, and if it is, I
would love to see more of you attend. There is so much that can be
learned from attending something like this.
Personally, I had a great time; I can’t wait to see what they do
with this in the coming years.

Back to School Food Allergy Summit
Food Allergies have been
a known issue for a while. Believe it or not, I have other allergies
other than Gluten; I also cannot eat Sodium Nitrite/Nitrate. This means
that I have learned to be more aware of allergies than many since mine are so hard to
avoid, but none of my allergies are immediately life threatening. This is
the case with some school children. Knowing
that your school is ready for the school year and the allergies of your
children is important.
In this vein, there will
be a Food Allergy Summit on August 20, 2013 at 6:30pm located at 1200 N. Battlefield
Highway Chesapeake VA.
I will be attending to
learn more about other allergies and I would love to meet a few of my readers.
So if you live in the Virginia area and can attend this Summit I would
love to see you. The Event is free!

Gluten Free Sunsceen (2013)
I have been doing a lot of research and have compiled a list of gluten free sunscreens. It is important to protect our skin this year and keep ourselves healthy and gluten free while doing so. I have spend the last few weeks adding to this list and doing research. Here is what I have found
Some of these products contain other allergens and I will list those after the table. In Alphabetical order here are all of the sunscreens I have found so far, that is not to say that I haven't missed at least a few, you might also want to check your local health food store or farmers market for ones that are not commercially made. The Stared ones are organic.

Tips on how to eat out safely!

When you sit down ask for the allergy menu and specify that it is an allergy.
If you still feel unsure that they will get your Order right ask to speak to the manager before you order.
When you order your meal make sure you specify that it is an allergy and have them write it down.
