If you Have Celiac, You may react to Corn!

In February of 2012 a new study was done on those people with diagnosed Celiac and how the proteins commonly found in corn can affected them.  The reason for this study was that some people who have Celiac are still not getting better, even after going on a traditional gluten free diet.  Why is this happening?  It turns out that the gluten in corn is similar enough to the gluten in wheat, barley, and rye to create a reaction in a few celiac patients.

Gluten Free Sunsceen (2013)



I have been doing a lot of research and have compiled a list of gluten free sunscreens.  It is important to protect our skin this year and keep ourselves healthy and gluten free while doing so. I have spend the last few weeks adding to this list and doing research.  Here is what I have found

Some of these products contain other allergens and I will list those after the table.  In Alphabetical order here are all of the sunscreens I have found so far, that is not to say that I haven't missed at least a few, you might also want to check your local health food store or farmers market for ones that are not commercially made. The Stared ones are organic.

Nescafe memento -Review-





As part of my Bzz Agent thing I was asked to review Nescafe Memento.  I received all three flavors Cappuccino, Mocha and Caramel Latte.  The first thing I did when I was invited to this campaign was check to see if these items were gluten free.  The good news is that they are gluten free unless you have an allergy to Corn.  They are however, not lactose free.  Also if you have a coconut allergy then these are not the products for you.

Tamale Recipe (repost)



We made Chicken Tamales tonight and I remembered that I had posted a recipe for Tamales on my blog back at the start of it.  I thought now would be a great time to do a repost.


 I was told that the Tamale is for celebration.  Therefore I am celebrating the fact that I like tamales.  This recipe is so good and it is gluten free naturally (as long as you don't react to corn).  It takes a lot of time to make and a lot of talent to roll them correctly, as seen by the picture I as of yet do not have the level of talent needed for rolling them correctly.  I was also so impatient to eat them that I almost forgot to take a picture first.  In other news I am being sent my first item to review.  This is hugely exciting for me.  So I guess I do have something to celebrate!  Please do not try this if you have issues with Corn!

The First Month of your Gluten Free Diet

The first two weeks to a month of your new gluten free diet are critical. This is the time when your body is just starting to heal and you are just starting to drop your addiction to gluten and gluten containing products.  It is also the time where a lot of people screw up.  You may not know that you are still eating gluten.  Check this post to find out what can sneak gluten in Sneaky gluten containing foods.

Corn may not be Gluten free!!!

In February of this year a new study was done on those people with Celiac and how corn affected them.  The reason for this study was that some people who have Celiac are still not getting better.  Why is this happening?  It turns out that the gluten in corn is similar enough to the gluten in wheat, barley, and rye so create a reason in those celiac patients.  



One of the reasons this missed is because of the way we test for Celiac.  Since doctors measure blood for gluten reactions only certain reaction can be seen. The reaction to the gluten in Corn doesn't show up the same way.    

Celiac can come in a variety of forms

Since we are still learning so much about this issue we have a long way to go.  A good percentage of celiac patients are not getting better by eating a gluten free diet.  That means that something in the diet is still causing issues.  If this is the case I strongly suggest that you cut corn and all things containing corn or "Maze" from your diet.  This can be really hard since corn is in just about everything.  By trying to live Gluten and corn free this will very much narrow down what you can eat.  However, if it makes you feel better than it is worth it.  If cutting corn is not helping then you might need to go back to see your doctor to find out what is going on.
