Being Gluten free means that you can still enjoy many foods. However, I am not a fan of corn tortillas and many people can't have them. I ended up making a Fantastic gluten free dish out of taco night leftovers.
Ingredients
Left over Taco Meat
Shredded chedder cheese
Gluten Free Crackers
Chopped onion (to taste)
Chopped Tomato and lettuce (to taste)
Salsa and sour cream (if you wish)
Take the Gluten free crackers (I used the Gluten Free Matzo Squares pictured)
Sprinkle the shredded cheese on top
Add the left over taco meat to taste
Sprinkle on as much onion as you would like
Microwave for 30 seconds to a minute
I then top mine with the tomato, lettuce, salsa and sour cream
Such an easy way to use leftovers and very yummy too. It kind of works like a small taco flat-bread pizza.
