It is the first part of strawberry season and nothing screams spring more that using strawberries as a base for your cheesecake.  Also this is a quick and oh so yummy way to eat cheesecake.  You can mix this recipe up by adding caramel or chocolate drizzles to the top or adding GF flavoring to the cheesecake.  You can also mix in chocolate shavings.  Here is the basic recipe!

Ingredients:

20 Strawberries
1 TBSP of GF Vanilla Extract
8 oz of room temperature cream cheese (make sure it is gluten free)
1/4 cup of powdered sugar

Cut off the top of the strawberries then turn them over so the tip is up.
From the tip of the strawberries cut an x into them without cutting all the way through the strawberry.
In a mixing bowl mix together the cream cheese, the powdered sugar and the vanilla
In a plastic bags or decorating bag put in the cream cheese mixture
Pipe the cream cheese into the strawberries
Chill and serve
