National Sandwich Day

In honor of National Sandwich Day I have decided to make an old favorite for me. A spicy toasted BLT. Of Course this is on Gluten free bread. In fact everything in the photo is gluten free. The muffin is an Udi's Lemon Streusel the Soup was made here using corn noodles and gluten free chicken stock. I will share that recipe later this week but for today in honor of national Sandwich day I figured that I will give you the basic ingredients for this amazing sandwich.

Gluten free bread
No preservative Bacon
Tomato slices
Lettuce
Pepper Jack cheese
Mayo

Crisp your chosen amount of bacon.
Lightly toast your favorite gluten free bread
Spread mayo to taste on the bread
Add the hot bacon, the tomato slices, the lettuce, and the pepper jack cheese and grill for a few minutes until the cheese is melty.
Cut or eat whole and enjoy.

Also Sandwich day has got me thinking about those who need food after sandy. While it is amazing the amount of help that is coming from the rest of the United States those whole have a gluten allergy cannot eat almost anything that is being made or handed out. I am thinking of getting together with other gluten free bloggers to see if we can persuade some of the gluten free companies to send items to New York for those that cannot eat most of the food that is currently being sent. I have to work out the details and find those that are willing to join.
