Gluten Free Doughnuts Semi-Homemade

Glazed with sprinkles

I have been having a killer craving for doughnuts recently and almost nothing was making it better. All of the store bought GF doughnuts are disgusting, so instead of feeling sorry for myself I decided to bake.  At 10pm at night I start making doughnuts.  I did break down and buy a doughnut pan on black Friday so at least I have the right tools, now to find a way to make the darned things.  I look for many online recipes and found that they all require a doughnut maker, something I will admit that I am currently too poor to own.  OK so I can't do that and I am having issues finding any recipes, especially ones that are semi-homemade and gluten free.  I ended up putting together those doughnut maker recipes and coming up with one that is close the recipe on my doughnut pan.

Batter

Ingredients
Full box Gluten free yellow or chocolate Cake Mix
2 large eggs (or substitute)
1 stick melted butter (or substitute)
1 cup milk (Almond milk works)

Directions: Preheat oven to 350 degrees

Grease doughnut pan
Mix eggs, butter and milk with the cake mix
using a mixer or by hand beat until the batter is smooth
pour batter into the doughnut pan almost filling the cup.  (I used an icing bag for this)
Bake for 14 minutes.

Plain
For a fantastic icing stolen from my cinnamon roll recipe.

Cream Cheese Icing:
4 ounces cream cheese, softened
1/4 cup butter, softened
1 1/2 cups powdered sugar
1 1/2 teaspoons milk
1/2 teaspoon vanilla

Mix together, then melt slightly to put onto the doughnuts.

Almond milk icing:
3/4 c powdered sugar
1 Tbsp almond milk
1/4 tsp vanilla

Mix

Powdered sugar
You can also use cinnamon and sugar, or powder sugar in a plastic bag (just put the doughnut in the bag when it is hot) Top however you desire.  Next time I am making blueberry doughnuts.  Yumm

Product Review

Product Review

An exciting day, some of the products that I ordered have arrived.  So I will start with each item that I have tried in the last 24 hours.

Katz Gluten free doughnuts: Yeah not anywhere as good as I had hoped.  They were hard cake doughnuts with a light amount of not great jelly inside.  They might be better warmed but all in all they were not really good.  It was a great disappointment from a brand that I like.  I guess not any brand can do everything well.

Sof'ella Chocolate cake mix: this was fantastic even in a bread maker.  Yes I use a bread maker to make a cake; it turns out well on setting ten.  Well this was fantastic, it turned out very well.  I fed it to my not gluten free family.  They loved it.  I loved it, it tasted like normal cake.  It was a little light on the chocolate flavor but great with the leftover cream cheese frosting.  I highly recommend this brand.

The Kitchen Table Bakers Aged Parmesan Crisps:  Yes this is gluten free but they taste like stale oily Parmesan cheese.  I suggest you save the massive amount of money that these cost they should be better.  I Buy Parmesan cheese and make your own, it will taste better and cost less.

Note: if you have bought these and didn't like them, instead of throwing them away try breaking them up and adding them to a salad.  That made them editable.

recipe pulled from About.com Cheese crisps

  • 1 cup grated hard cheese (such as Parmesean) - NOT the dried powdery stuff

Preparation:

Preheat oven to 350 F.

Note on type of cheese: You can use any kind, really, but the results will be different. Hard cheeses, such as Parmesan, Romano, Asagio, etc, will make a crisp "shell," whereas cheddar will be more chewy and "lacey" (the fat separates out), though still firm. Softer cheeses such as mozzerella will not work well.

Toss cheese with any seasonings you'd like -- garlic powder (about half a teaspoon for a cup of cheese), hot pepper powder, even cinnamon. Or leave plain.

Pile 1 to 4 Tablespoons of cheese (depending on the size you want) on a baking sheet covered with a Silicone mat or parchment paper oiled on both sides. Flatten the tops so they are in more or less an even pile. There should be at least two inches between smaller mounds, 4 inches between larger ones.

Bake 5 to 6 minutes until they are a light golden brown (they will be a little darker at the edges). It happens fast, so watch carefully.

These will be much better and they will not be stale.

Exciting new products

Exciting new products:

Ok a few new products have been released and I can't wait to try them.  Things like dinner rolls, egg rolls, mozzarella sticks and doughnuts are now available gluten free.   I am so excited to try many of these products.

Dinner rolls: Udi's has announced that they are coming out with new products for the fall.  This means that there are more products for me to try.  Since I tend to like the Udi's brand this will definitely be something I pick up.  They are also doing GF French baguettes; I will let you know how everything tastes when it arrives.

Egg rolls: I am still fighting with my grocery store to start carrying more variety of GF foods and cannot give these a shot yet.  However, a natural foods store is opening up in about a month so that might be my chance.  One of the things I have been missing is easy ethnic food.  (Well ethnic for me) this means great tasting burritos as well as egg rolls and sushi.  I still can't do much about sushi, as for burritos it depends on the type as well as the brand, and I still have yet to try the egg rolls.  However, I am more than willing to do so.

Mozzarella sticks: I love and miss you so much; recently I have learned that heath is wealth has started making them.  I have yet to try them but as soon as I find them in the store I will be picking them up and letting you know how they are.   I know there are many recipes out there but I haven't thought of making it myself and I hate to say it I am kind of a lazy cook.  I really don't want to spend hours in the kitchen making the perfect meal for myself and my family.  I would rather spend time with my family and watch them cook. Oh wait that is not happening.  Anyway there have been great reviews about these products but the best review is the one you do yourself.

Doughnuts: Until Duncan doughnuts comes out with a fantastic GF line I am stuck with buying them in the frozen section or online.  I have tried a few such as the Kinnikinnick brand and Yuck.  Not that I have found anything made by Kinnikinnick to be any good any way.  I guess it would be great if you have been GF for your entire life.  However most of their products do not interest me.  But yet again I digress, I have on order Katz GF doughnuts and that includes jelly filled.  I learned about Katz when I found their free sample pack.  Note: if you want a free sample pack just go to Katz Gluten Free find the sample pack and follow the instructions, you still have to pay shipping.  Let me tell you the product was really great.  I look forward to letting you know how amazing Jelly filled doughnuts are.  Well the GF variety anyway, I mean most jelly doughnuts are amazing but I can't eat them.
Note: being GF does not mean I have to eat healthy right?
